Recipe Summary

Seafood Salad -Frutti Di Mare

 

Recipe Yields 5 lbs

 

 

2 ½ lbs Cleaned Calamari

1 lb Gutted Baby Octopus

1 ½ lb 41/50 ct Cleaned Shrimp

1 Head of Celery

¾ lb Vinegar Pepper

Bunch of Parsley

Teaspoon of Dijon Mustard

1 qt Olive Oil

1 ½ cups Lemon Juice

1 ounce Salt

Pinch of Fresh Red Pepper

6 Cloves of Chopped Garlic

 

 

Procedure:

 

First you will cut your calamari into rings, leaving the head whole. Then bring a pot of water to a boil adding plenty of salt. Place the calamari into the water until the water comes back to a rolling boil, then strain and cool off. The shrimp will be boiled for 2-3 min and the baby octopus will be boiled for 3-4 min. The shrimp and baby octopus must be cooled down as well. Then to create your salad in a large bowl add your cooked calamari, shrimp, baby octopus, your chopped celery, julienne vinegar peppers, chopped parsley, chopped garlic, dijon mustard, olive oil, lemon juice, salt, and red pepper. Then mix everything thoroughly and let it sit in the fridge for 4-5 hours before serving.
