Iavarone Bros. Specially Selected - Prima Donna- Aged Gouda
Prima Donna is a brand name for this ""Proosdy,"" which, while similar to an aged Gouda, has lower butterfat than the required 48% for Gouda (this one has 45%), and its edges are noticeably sharper. Our classic ""one year gouda,"" Prima Donna has a firm, toothsome paste that retains its dense moisture and has begun to develop the characteristic caramellized flavors of longer aged Gouda styles. Aged for 14 months and made of pasteurized cows' milk. It has an ivory rind with slight rose blush; bright, crunchy texture; and a sweet, nutty flavor with a distinct caramel aftertaste. Prima Donna is an excellent starting point for people new to artisanal cheeses. Pair it with Merlot, Cabernet Sauvignon, Sangiovese, Amarone, or Zinfandel.

While this cow's milk cheese from Argentina cheese borrows its name from a Sardinian sheep's milk cheese, it has truly made a name for itself. Stella - Domestic Parmigiano
This hard, dry cheese is made from skimmed or partially skimmed cow's milk. It has a hard, pale-golden rind and a straw-colored interior with a rich, sharp flavor. This U.S. rendition is aged 14 months; Italy’s Parmigiano-Reggiano is more often aged 2 years. Parmigiano’s are primarily used for grating and in Italy are termed grana, meaning, "grain" and referring to their granular textures.

The Locatelli family began producing Pecorino Romano over 500 years ago. It is unique in quality and uniformity. It is also made from the finest grade sheep's milk and aged at least nine months.
