The Conchigliette are a typical Central and Southern Italian specialty, 12.5 mm long and with a varying thickness between 1,10 and 1,20 mm. This type of pasta takes its name after the conch shell shaped dough. The Conchigliette are generally served in broth soups and make an excellent dish in rich vegetables and legumes minestroni.
