In Sicily and Sardinia, this describes a Pecorino (sheep's milk cheese) in the early stages of maturation; the name literally means 'first salt.' Today, this white rindless cheese is also made with cows' milk. Primo sale is ready to be placed on the market a few days after preparation, and it is lovely grated over pasta; Sicilians enjoy it on their pasta with cauliflower.
