This superb balsamic vinegar is made in Modena, Italy, from sweet, white Trebbiano and Lambusco grapes. It grows richer and darker as it's aged for about 12 months, all the while being transferred to smaller and smaller barrels of different aromatic woods (oak, chestnut, mulberry and juniper). Use the vinegar to enliven salad dressings, marinades and sauces; or do as the Italians do and drizzle it over fresh strawberries, topped with a grinding of black pepper.
